2 oz.	gin
	club soda
1 oz.	lemon juice (fresh squeezed)
1 tsp.	superfine sugar (bakers sugar)

Shake ingredients with cracked ice; strain into a Collins glass filled with ice. Top with soda water and garnish with a cherry and orange wheel.

The Collins family is versatile and refreshing. The John Collins is made with Holland gin, the Jack Collins with Applejack brandy.
