Mojito
2-3 oz.light rum
1/2lime, quartered
8-9fresh mint leaves
1 heaping tsp.superfine sugar (bakers sugar)
Muddle the lime, sugar, and mint in the bottom of a pint glass. Add white rum and fill with ice to the very brim. Cover with your metal shaker and shake-shake-shake away. Pour from metal shaker back into the pint glass with equal parts club soda. Serve with a straw to avoid a mouthful of crushed mint.
This drink is best made with fresh mint. FlyingCracker went to the extreme of planting our own mint garden, against the advice of several friends. Despite their worries we had no trouble keeping the mint from taking over our yard. Maybe they need to make more Mojitos! Finally, heed this advice: when you are finished making the first batch immediately start mixing the second batch. Believe us, you'll need it. You may be able to rest after the second batch, but don't get too comfortable...
